Lentil, Barley and Mushroom Soup

Serves 4

Ingredients:

2 medium leeks, trimmed, halved, sliced

10 white mushrooms, sliced

3 garlic cloves, cut

2 bay leaves

2 cans tomatoes, chopped, undrained

3/4 cup red lentils

1/3 cup barley

3 cups water

3 tbsp olive oil

1 tsp paprika

1 tsp savory

1/2 tsp cumin

Directions:

Heat oil in a large saucepan over medium-high heat. Sauté leeks and mushrooms for 3 to 4 minutes or until softened. Add cumin, paprika, savory and tomatoes, lentils, barley and 3 cups of cold water. Season with salt and pepper. Cover and bring to the boil. Reduce heat to low. Simmer for 35 to 40 minutes or until barley is tender.
